Green Caesar Salad

I enjoyed a big ol’ salad this afternoon, that I’m calling a Green Caesar. I used a mix of kale and romaine as the base, and created a green dressing very reminiscent of Caesar dressing. The salad has a nice tartness from the lemon juice, with crunch from rainbow carrots and radishes, plus a sweet juiciness from the cucumbers. This is definitely one for the book! 

This salad contains some of my favorite healing foods, such as:

Kale is good for detoxing that provides powerful healing and anti-cancer phytochemicals. It is rich in omega-3 fatty acids, vitamins A, C, E, K, B-complex, amino acids, and other minerals like iron, magnesium, copper, and potassium.

Romaine lettuce helps build a healthy immune system. It is high in omega-3 and contains all 8 essential amino acids. It is also rich in beta carotene, folate, and vitamins C, E, and K.

Lemons are a major healing citrus that help cleanse detox your entire body. They are rich in vitamins C and B-complex and minerals such as iron, calcium, magnesium, silicon, copper, and potassium.

Radishes help dissolve acids and mucus in the body, so they are great for sinus congestion, chest colds, and sore throats. Radishes are rich in Vitamin C, folate, and anthocyanins.

Cucumbers are packed with antioxidants and enzymes that help you to digest proteins. They are highly alkalinizing and hydrating for the body providing vitamins A, C, K, magnesium, silicon, and potassium.

Cilantro is a versatile healing herb that contains vitamins A, K, & C, and minerals like iron, calcium, and magnesium. It is also very high in antioxidants and helps detox the body of heavy metals.

Try this satisfying recipe and get the benefits of these powerful healing foods!


  • 1 lemon, juiced
  • 1/4 cup water
  • 1/2 cup raw cashews
  • 1/3 bunch cilantro
  • 1/2 tsp garlic powder
  • 1 garlic clove
  • 1 tbsp coconut aminos
  • Himalayan Salt, to taste


  • 1/2 bunch kale, chopped and massaged
  • 1 romaine heart, chopped
  • 1 rainbow carrot, diced
  • 1 green onion, sliced
  • 2-4 radishes, halved and sliced
  • 1/2 cucumber, peeled, quartered and sliced

Toss all ingredients and enjoy!

NOTE: this is enough for one big personal salad. Double to enjoy with a friend.
